Ok, these are so addicting! Gingersnap cookies are good anytime of the year? These ones are soft and fluffy, not really “snappy”. They would be so good as sandwiches with cream in the middle! (why didn’t I do that?!???‍♀️) Anyways, here’s my recipe for soft gingersnap cookies! ? ⁣⁣
Yield: 16⁣⁣
Calories/cookie: 134⁣⁣
Cooking Time: 10 minutes⁣⁣
Dry Ingredients: ⁣⁣
1 cup 1 to 1 Baking Flour (or all-purpose)⁣
1/2 cup almond meal flour⁣⁣
1 tbsp cornstarch/ground flaxseeds/almond meal⁣⁣
1 tsp baking soda⁣⁣
1/2 tsp baking powder⁣⁣
1 1/2 tsp ginger⁣⁣
1 1/2 tsp cinnamon⁣⁣
1 tsp nutmeg⁣⁣
1/8 tsp cloves⁣⁣
1/4 tsp salt⁣⁣
Wet Ingredients:⁣⁣
1/4 cup melted coconut oil⁣⁣
1/4 cup vegan butter (I used Earth Balance) or coconut oil for a more prominent coconut taste⁣
1/3 cup pure maple syrup⁣⁣
2 tsp molasses⁣⁣
1) Preheat the oven to 350°F/ 180°C and line a baking sheet with parchment paper. ⁣
2) Whisk dry ingredients in a large bowl until well combined. ⁣
3) Thoroughly combine wet ingredients in a small bowl, then slowly combine the mixture with the dry mixture, mixing until a dough forms. ⁣
4) Roll the dough into small balls and place 2 inches apart on the baking sheet. FLATTEN THE COOKIES to 1/2 inch thick with the lid of a mason jar, or something similar. ⁣
5) Bake at 350°F/180°C for 10 minutes, then transfer to a cooling rack for 5 minutes so that they can harden.⁣
6) Try not to eat them all in one go ?⁣
