? Quick & Easy Chickpea “Tuna” Sandwich ?

Craving for the fullness and texture of tuna? This no-cook, no-tuna sandwich will be a quick and easy meal you can enjoy! ??

Chickpeas are the star and the vegan alternative of this sandwich. It’s not going to taste exactly like tuna, but you get the same distinct feel when it hits your mouth!?? The lemon, celery, and onion gives tang to the chickpeas! You can add shredded nori sheets, too, for that “fish-like” flavoring.

Sandwich in between hearty buns and lettuce or serve with crackers, you’ll have the perfect vegan sandwich that’s filling and rich in nutrients! ?

INGREDIENTS
1 can (400g) chickpeas (garbanzo beans), drained and rinsed
Juice of half a lemon
1/3 cup vegan mayo (or to taste)
1/4 cup celery, chopped
1/4 cup red onion, minced
1/2 teaspoon garlic powder (or to taste)
Salt and cracked black pepper, to taste

6 sandwich buns or whole wheat bread slices
Romaine lettuce and sliced tomatoes, plus any desired fixings, to serve
shredded nori sheets (optional)

PROCEDURE
1 Place chickpeas in a large bowl and mash the chickpeas with the back of a fork or potato masher or food processor until desired consistency. Add the rest of the ingredients and mix until well combined.

2 Spread the chickpea mixture in between sandwich buns, lettuce, and your choice of fixings! Serve chilled or at room temperature.

Makes 6 sandwiches
