french onion soup grilled cheese multip img 0 c3698e1c


I had French Onion Soup on my mind all day… decadently caramelized onions, herby essence, toasted baguette and a slathering of guyere melted on top were getting me through the work day. But when I started to cook, I had a mindset shift — I think I wanted all of those things, minus the actual ‘soup’ part. Alas! The French Onion Soup grilled cheese was born! Everything you love most about the soup, sans broth. Truly decadent and delicious and I know you’ll love it too!⠀

Ingredients (makes two sandwiches)⠀
– 1 large yellow onion ⠀
– 6 Tbs butter, divided⠀
– 4 slices sourdough (I used a whole wheat sourdough boule from @traderjoes)⠀
– 1/2 cup dry white wine, like Sauv Blanc or Chardonnay ⠀
– 1 cup shredded cheese (I used a gruyere and swiss blend, also from TJ’s)⠀
– Fresh sage and thyme ⠀
– olive oil, salt to taste ⠀

– Slice your onion in half, and then into thin slices. In a large pan over medium heat, heat 1-2 Tbs olive oil and 1 Tbs butter. Once hot, add your sliced onions and toss, coating thoroughly. ⠀
– Keep an eye on your onions and toss them every few minutes to prevent burning. Keep on the heat for 30 mins. After 30 mins, start adding your white wine a few Tbs at a time and tossing so the wine can absorb before adding more. Add a few leaves of sage and sprigs of thyme. Reduce heat if your onions start to burn.⠀
– After about 45 mins, remove sage and thyme and turn off heat. Butter all sides of bread and add about 1/2 cup shredded cheese to each sandwich, then top it off with the caramelized onions. ⠀
– Fry sandwich on each side until browned, covering to melt the cheese. Slice in half and serve! ⠀
