Are you missing tuna mayonnaise sandwiches this Veganuary? Look no further!
This easy, nutritious and delicious sandwich is a great alternative.

You will need:
– Your favourite bread
– 1 can of chickpeas
– Heaped tbsp vegan mayonnaise
– Juice of 1/2 lemon
– 1-2 chopped spring onions
– Salt and pepper to taste

Simply smash up the drained chickpeas in a bowl and mix in the rest of the ingredients. Add parsley or chopped capers for an extra zing if you like. You will have an instant sandwich filling.
