Chickpea ‘tuna’ Mayo pittas 🥙 I remembered ages ago watching a @frommybowl YouTube video where chickpea Mayo was made, so I thought I’d give my own version a go!

You will need;
1 time chickpeas
3 tbsp vegan Mayo (I used @hellmannsuk )
2 tsp lemon juice
1 tsp of mustard
1/2 tsp garlic powder
1 chopped red onion

Method;
Drain the chickpeas, in a large bowl squish them up a bit with the back of a spoon, add all the other ingredients and make sure it’s mixed up well! I toasted a wholewheat pitta and popped the mixture inside 🥙

The mixture can be kept in the fridge for a few days, it goes well in sandwiches, wraps, pittas etc but I reckon it’d be good on top of a baked potato too 🥔
