✨Banh Mi Sandwich✨

Whenever we’ll be allowed to travel again, visiting Vietnam will definitely be high up on my bucket list, if not only to try the authentic version of a vegan banh mi sandwich! 😝 Until then, this homemade version will have to keep me satisfied, so good thing it’s absolutely delicious! It’s also a great way to use up leftover veggies. I simply pickle ‘em, stuff ‘em in this sandwich and I’m a happy gal again! 🥰

(4 sandwiches)
Pickled veggies
🔸120 ml rice vinegar
🔸1 tbsp sugar
🔸1/2 tsp salt
🔸1/2 cucumber, cut into sticks
🔸1 carrot, cut into sticks
🔸4 radishes, sliced
Marinated tofu
▪️200 g block of firm tofu, sliced
▪️2 1/2 tbsp tamari/soy sauce
▪️1 tbsp mirin (optional)
▪️1 tbsp agave nectar
▪️1 tsp sesame oil
▪️1 tsp lime juice
▪️1 tsp sriracha
▪️1/2 tsp garlic powder
▪️1/2 tsp ginger powder
▪️Cracked black pepper
▪️1 stalk lemongrass, minced

Baguettes, hoisin, vegan mayo, sriracha, coriander, spring onion.

Whisk vinegar, salt & sugar together, then to a jar, add the veggies & pickling mixture. Let chill in the fridge for at least an hour, preferably overnight. Next, whisk all marinade ingredients together and let the tofu marinate for at least 15 mins or up to an hour. Heat up some oil in a pan and cook the tofu slices for a few mins on each side. Assemble the banh mi by slicing open your baguette and slathering on some hoisin & vegan mayo, then stuffing it with the pickled veggies & tofu. Finish off with some sriracha, fresh coriander & spring onion, now enjoy! 🎉

This is for sure one of my fave sandwiches to make, it’s just sooo good! I’m definitely a big sandwich lover in general, can’t really beat anything that involves bread, can ya? 😅
