Vegan salmon tofu with rice, dills and black eyed peas! ??
This pan seared fish inspired tofu is a must try! ?Not only that the Aroma and flavors of the dills black eyes peas rice is a next level! ???
For the tofu salmon:
For marinade sauce In a blender mix:
1. 1 Tsp bouillon with water or only vegetable stock
2. 1/4 cup liquid aminos or soy sauce
3. 1 tbsp small capers
4. 1 Tsp liquid smoke
5. 1-2 tbsp beet juice
6. Half a sheet nori
7. 1 tbsp olive oil
8. 2 tbsp Lemon juice or vinegar
9. Garlic powder, onion powder, black pepper, smoked paprika
Blend and set aside.
We need super firm tofu cut the tofu and slits into them to create flaky texture! Pour the marinade sauce over tofu and let it sit for 20-30 minutes.
Cut nori sheets as the same size of your tofu, I sprayed Avocado oil on one side of it and stick the nori sheet on it and sear both sides of salmon tofu in olive oil top with garlic and lemon ?
Rice with dills and black-eyed peas! ??
This delicious dish is a fragrant fluffy rice that pairs the pleasant flavors of dills, basmati rice, cinnamon and black eyed peas.
The Aroma of this dish is to die for ??♀️???
1. 2 cups Basmati rice, rinse and drain
2. 1 cup fresh dills
3. 1 cup cooked black eyed peas, rinse and drained
4. 1 small Onion, finely chopped
5. 2 cinnamon stick
6. Ground Cinnamon
7. 3-4 gloves of garlic
8. Vegetable stock as the liquid (refer to the ratio of liquid to rice on the package)
9. Vegan butter
For this dish i used Pilaf method!
Heat some butter in a pot or deep large pan, sauté the chopped onions until they become caramelized and add chopped garlic sauté for few seconds then add the rice and cinnamon sticks and sauté for couple of minutes, next add the stock & salt bring to a boil, reduce the heat and cover. When all the water absorbed add the chopped fresh dills and black eyed peas along with touch of ground Cinnamon and vegan butter mix it well cover few more minutes and the rice is ready turn of the heat let it sit for 10 minutes then fluff the rice with the fork,
