πŸ₯• SMOKED CARROT LOX πŸ₯• on salt n pepper crackers with @nushfoods chive cheese spread. Smoked carrot is my absolute faveeee, tastes so similar to smoked salmon and is so easy to make.

✨You’ll need:✨
β€’ 5 large carrots
β€’ coarse sea salt for coating
β€’ 3 tbs extra-virgin olive oil
β€’ 1 lemon (squeezed)
β€’ 1 tbs liquid smoke
β€’ 2 tbs nori sheets or dulce seaweed finely chopped
β€’ 2 tbs caper brine
β€’ 1 tsp rice vinegar
β€’ Ground black pepper
Optional extras:
β€’ fresh dill, chives or samphire

Wash the carrots and blot dry with kitchen roll. Place the carrots in an oven dish and sprinkle enough salt on to coat them (turn them to make sure they’re covered all sides).
Roast in the oven on 180Β° for 40 minutes. Once removed from the oven, wait for them to cool and use a sharp knife or peeler to carefully cut into strips.
Place into a lidded container and add all the rest of the ingredients and stir well. Leave to marinade for 24-48 hours in the fridge (you can eat them straight away but the texture and flavour develops better over time) and they’re done! πŸ˜πŸ’š
