I made lox, but #vegan 🥕 I’m so excited to share my recipe for Carrot Lox with y’all — made simply with carrots, salt + pantry staples like olive oil and soy sauce, this is a great salmon alternative that’s perfect for bagels or sushi. I enjoyed my carrot lox on a toasted @daveskillerbread everything bagel with @miyokoscreamery cream cheese, salt, pepper, red onion, capers + dill. Truly so delicious! It blows my mind how you can’t even tell that you’re eating carrots. 🌱🥯

Carrot Lox Recipe
• 2 1/2 cups salt
• 4-5 carrots
• 3 tbsps olive oil
• 2 tbsps tamari (or soy sauce)
• 1 tbsp apple cider vinegar
• 1 tbsp liquid smoke
• 1 tsp garlic powder
• 1 tbsp nori komi furikake (optional, but recommended)

Fill bottom of loaf pan with layer of salt before placing whole carrots in pan and covering with another layer of salt. The carrots should be completely submerged in the salt. Bake in oven at 375 for 2 hours. Once baked and cooled, remove the carrots from the salt and brush away excess salt. Use a sharp knife and thinly slice the carrots lengthwise into thin, uneven strips. Whisk together remaining ingredients in the bottom of a shallow sealable container before adding the carrot slices and tossing everything together until all carrots are evenly coated. Seal the container and let your carrots marinate in the fridge for 3 days. Enjoy! ✨
