carrot lox inspired by @edgyveg Quick Vegan Smoked Salmon
I tried making her recipe but didn’t have most of the marinade ingredients (lmao classic), very much wanted to veganize smoked salmon… so here we were trying to remake the recipe with what I had on hand, making smoked salmon from CARROTS ?

I’ve had this recipe saved for DAYS bc it’s the easiest one I’ve found— no baking in salt for hours (like real salmon), only simply boil the carrots (unpeeled) for 10 mins, slice, then stick in the marinade overnight!
✨for my lox flavoring: dissolved 1 tbsp miso paste in hot water, then poured in (all eyeballing) a lot of soy sauce, couple tbsp juice from a jar of olives (og recipe calls for caper brine), lemon juice, ton of garlic powder, splash of liquid smoke (KEY!!!) & 1/4 cup olive oil
Edgy Veg also adds in a crushed nori sheet & rice vinegar for extra umami flavor which I highly recommend!!!
I wouldn’t say this is similar to smoked salmon in any way (the texture will never be the same, can’t get that fresh fish vibe), but a great smoky umami flavor & interesting soft texture!

✨tofu cream cheeze: blended 1/2 block firm tofu, 1 tsp miso paste, juice from 1/2 lemon, garlic powder, 2 tbsp nooch, pinch of sea salt & splash of olive brine
blended it all up to a creamy texture!

✨toasted a couple slices of my homemade focaccia (see previous post?), slathered on a THICCC layer of cream cheeze & topped with a few of the carrot lox slices for a perfect lunch ?
