Starting Monday off with meals planned, prepped, and ready is the BEST!! 😍 Anyone with me? I love meal prepping on Sundays, especially when I’m prepping something like these DELICIOUS Mediterranean Quinoa Salads with a Creamy Greek Lemon Vinaigrette. 😋 Meal prepping/planning sets you up for a successful stress-free week, helps you make healthy choices, and frees up time during busy weeks for you to spend more time doing the things you love! 👏🏼 Check out the recipe for theses salads below and add them to your next meal plan! Mediterranean Kale Quinoa Salads 🥗
• Kale, chopped fine and massaged with lemon juice + EVOO
• @ancientharvest Quinoa, cooked accordingly and cooled
• Red Pepper, chopped
• Red Onion, chopped
• Cucumbers, sliced
• @sunsetgrown Cherry Tomatoes, halved
• Chickpeas, rinsed and drained
• Pine Nuts, toasted
• Kalamata Olives, halved
• @violife_foods vegan feta
Creamy Lemon Greek Dressing 🍋
• 1/4 C Water
• 3 TBSP @addjoi Raw Cashew Base (could also use raw cashew butter or tahini)
• 1/4 C Red Wine Vinegar
• 1 tsp @misomaster White Miso Paste
• 1/2 tsp @allspicedsm Greek Seasoning
• 1 tsp @wholesomesweet Raw Agave
• 1 tsp @wildharvestbrand Dijon Mustard
• 1 Lemon, juiced
1. Add all ingredients for salads to bowls.
2. Put all ingredients for dressing into a @nutribullet and puree until smooth and creamy.
3. Toss salad with dressing right before serving.
