Spicy Baked Falafel with Cauliflower Ricešā£
Healthy doesn’t have to take ages and ages. This is a quick meal from leftover falafel, mixed salads and a packet of @fullgreen.official riced cauliflower which I was delighted to try. Veggie rice is great for when time is of the essence, as you can eat it straight away, sprinkle it onto salads or add to a stir fry and have it on your plate in minutes.ššā£

Here is the Spicy Baked Falafel recipe in case you need one! ā£

400g cooked or 2 tins chickpeasā£
1 cooked apple (or blend a raw apple)ā£
1 & 1/2 lemons- peel and pips removed, use all the lemon flesh for extra goodnessā£
1 tablespoon curry powderā£
1 tablespoon cuminā£
2 tablespoons tahiniā£
2 tablespoons olive oilā£
1 teaspoon salt (optional)ā£
1/4 teaspoon pepperā£
A handful of coriander ā£
Brown rice flour⣠(to coat the falafel balls)
ā£
Food process all the ingredients until they’re roughly mixed together. shape into balls and refrigerate for 1/2 hour. Roll in brown rice or other flour. Bake for 40 mins at 180.ā£

Tahini dressing: tahini, olive oil, herbs, salt, squeeze of lemon juiceā£
Tzatziki: plant yoghurt, cucumber, salt, papper, lemon juiceā£
