Recipe Alert [Crunchy & Tangy Pickled Vegetables in Apple Cider Vinaigrette]

It is simply vegetables, pickled in a vinegar, water, salt, sugar, solution and stored in the refrigerator.

Pickled veggies are delicious as a snack straight from the jar or also perfect for adding to bowl meals, salads, and sandwiches.

📒Recipe

Ingredients:
* Vegetables (like Radish, Carrot, Cucumber, green chilli or as per choice)
* 4 cups water
* 1.5 cups apple cider vinegar
* 2 tbsp sugar
* 2 tsp salt or as per taste
 
Steps:
● Wash & cut the vegetables like radish cucumber(without seeds), carrot n green chilli(optional) into thin slices.

● Put sliced veggies into a strainer and sprinkle with some salt. Mix and let drain for 30 minutes; this will help the vegetables lose water. After that wash inside the strainer with water. Strain & Let it dry for 15-20 mins on a kitchen towel.

● To prepare the vinaigrette, boil four cups of water with the vinegar, salt and sugar until the sugar and salt have dissolved.

● Now in a dry & clean glass jar (heat proof), put some garlic cloves & whole black pepper or dried herbs of your choice.

● Then fill the jar with the vegetables, leaving a 1/2-inch space from the top.

● Pour the hot vinaigrette over the vegetables in the jars, until the liquid covers them. Cover the jars well and dont open for 24 hours. After that it is ready to be consumed. Once opened, the jars can be kept in the refrigerator for up to 3 weeks.
