QUINOA AND CHICKPEA SALAD
I saw the recipe on @pickuplimes and did some alterations to my liking. This summers salad is a good alternative to leafy green salads. Quinoa is high in protein, gluten free pseudo-grain and has all nine essential amino acids .This fiber rich grain is very nutritious.

RECEPIE:
1/2 cup cooked Quinoa
1 cup (165g) cooked chickpeas
2 bell peppers (1 yellow and 1 red)
1 large cucumber, diced
1/4 cup olives choped
1 sprig green onion, thinly sliced
1/2 cup (70g) roasted almonds,  

INGREDIENTS:
Dressing
1 lemons, juiced
2 Tbsp olive oil
1 head of garlic
1 tbs Tahini (sesame seed paste )
1 tsp soy sauce 
1 tsp vinegar 
Salt and pepper to taste
 
DIRECTIONS:
Pre-heat the oven to 200 C. Cut the top off the head of garlic, and place it on a baking sheet. Put olive oil and roast for 15-20 minutes
Add diced veggies, cooked quinoa, chickpeas.
Mash garlic in a small bowl with a fork, add the rest of the dressing ingredients. Stir to combine. Pour dressing over the salad and combine.
