?Preserving food!?

Preserving food stops the growth of microorganisms and slows the oxidation of fats that cause rancidity (off food). Pickled veggies keep for up to 2 months in the fridge but trust me, there is no way they are lasting that long once you taste them ? Pickles taste delicious in burgers, salads, with dip and even on their own!

?How to make pickling liquid/brine?
1) Equal parts hot water and basic vinegar (white vinegar, rice wine vinegar, apple cider vinegar, white wine vinegar – depending on the flavour profile you want to achieve).
2) Equal parts salt and white sugar (I try not to go over a tablespoon of each for 2 cups of liquid)
3) Any extra fresh herbs you would like to improve the flavour profile – but I also love plain brine ?
4) Bring all your ingredients to the boil in a saucepan to dissolve your salt and sugar ?Method:
1) Grab yourself a jar and clean with soapy water.
2) Slice up your vegetable thinly.
3) Add your pickling liquid/brine.
4) Seal the jar and place in the fridge for at least 48 hours before digging in.
5) Keep in your fridge for up to 2 months.
