Portobello “steak” Salad ?
(Whole30 – Keto – Paleo – Vegan)

Ingredients: (serves 2)
Portobello mushroom caps – 2
Sweet onion – 1 small
Roma tomatoes – 2
Romaine Lettuce – 6 leafs
Balsamic Vinegar- 2 TBSP
Olive oil – 1/2 TBSP
Garlic power – 1/4 TBS
Paprika- 1/4 TBS
Salt
Pepper

Method:
Drizzle the olive oil onto a stove top grille pan. While the pan is heating up (medium heat), season the inside of the portobello cap with garlic, paprika (evenly split between the two caps). Add salt and pepper to taste. Slice onions and tomato’s. Once the pan is hot add the mushrooms outside cap down. Drizzle 1 TBSP of balsamic evenly between the two caps (it’s ok of some rolls off into the pan). Cook 2-3 min then flip to the other side for another 2 min. Once you flip the mushrooms add sliced onion and tomato’s to the pan flip after 1 min. Remove all from heat. Plate two leafs of romaine lettuce, then the portobello, then top with tomatoes onions, and 1 leaf of romaine (ribbon sliced). Drizzle remaining balsamic vinegar evenly between the two salads. Enjoy!
