My Greek family never thought it was possible, but after days and days of anticipation and marination, I tasted the tastiest taste of all tastes: FETA. 💥 I have been getting vegan Greek salads from every place that will make one for me, and usually the vegan fetas taste bland (like they’re just chunks of tofu called “feta” to help the aesthetic of the salad instead of making it taste good). BUT, after searching the internet for feta recipes I found one that takes time, but it’s worth the wait. The secret ingredients are apple cider vinegar and oregano, please message me for the rest of the marinade! I left it marinating for about 3 days (and it could have benefited from more time tbh) and then I made this Greek pasta salad with @eatbanza pasta, red onion, cucumber, extra virgin olive oil, oregano, basil, garlic, onion powder, lemon juice, dolmas (Greek stuffed grape leaves) & I threw in some edamame because I’m obsessed. This is high protein, refreshing and perfect for these super hot days 🔥🥗 I’m trying not to understate how much this feta means to me! Wow!
