My Deconstructed Falafel Salad

-Mixed greens
-Roasted chickpeas
-Feta cheese
-Cucumbers
-Hummus
-Homemade Greek dressing

Roasted Chickpeas:
-heat the oven to 425F
-rinse a can of chickpeas and pat dry
-spread them on a piece of parchment paper on a baking sheet
-coat the chickpeas with a Tbs of olive oil (not too much or the won’t get crispy)
-add paprika, cumin, salt and pepper to taste
-bake for 30-35 minutes

Greek dressing:
-1/2 cup olive oil
-1 clove garlic
-4 Tbs red wine vinegar
-2 Tbs lemon juice
-1/2 teaspoon Dijon or regular mustard
-1 tsp dried oregano
-salt and pepper to taste

*mix all of your ingredient together
*to make it a little creamier I like to blend all of the ingredients for a few seconds in a blender

🌱 Quick tip: If you are someone who like a lot of dressing, try putting hummus in your salads! It adds a creamy texture and allows you to use less dressing!
