Mexican Salad 🥗🌮
Don’t think for a second that salads can get boring☝🏻you can vary so many things and make up new meals as you go. But if you have no idea how to make a delicious salad, say no more, here is some inspiration: I present you the mexican salad. I basically used ingredients I already had at home so prepping this salad only took 5 min at top. And we all like a quick lunch don’t we 😂
I had mexican vegan mince leftover. To prepare this I cooked one onion, 3 cloves of garlic with water and added a tablespoon of mustard and tomato puree. Then I added a mexican spice mix and added the mince. This will keep fresh in your fridge for days. So this is amazing to prepare in advance and to add to your meals for a topping, be it a salad or a baked potato 😉
Next to lots of lettuce, I added half of a cup of kidney beans, half a cup of corn and one tomato. You can add whatever vegetables you want here (mushrooms, peppers etc).
For a dressing I added my potato queso (recipe in previous posts, if you can’t find it let me know)
I love eating this in the summer and if you are not watching your weight, crush some nacho chips on top for that extra crunch 👌🏻
