I might have gone a tad overboard yesterday with it being the last weekend of the summer. ? I made all the salads – Potato Salad, Pasta Salad, and Chopped Green Salad!!!

Pasta Salad
.
16 oz pasta (short pasta – rotini, penne), prepared per package directions
1 bell pepper, diced
10 oz grape tomatoes, halved or quartered, depending on size
1/4 red onion, finely diced
1 clove of garlic, minced
1/2 c feta cheese (optional)
6 oz black olives, quartered
6-8, pickled red chilies chopped (optional, red pepper flakes can be substituted or diced jalapeños)
Salt & Pepper
Handful of chopped parsley, minced

Dressing:
1/2 c olive oil
1/4 c rice vinegar
2 tbsp honey
.
Combine dressing ingredients in a jar with a tight fitting lid and shake well to emulsify. Set aside.
In large bowl, add all ingredients & stir.
Add dressing and stir well.
Serve room temperature or chilled.
