In these hot summer nights we currently much more prefer cold dinners, or in German „Brotszeit“ 🥨 this means we would eat salads, some tofu or tempeh, homemade bread, hummus, avocado and some fresh cheese. We made this super fresh spread with cashews, greek yogurt and fresh herbs from the balcony ☺️
We loved it and need to repeat it soon! Do you want to try it out?

Ingredients:
– 1 cup cashews, soaked over night and drained
– 3 tbsp greek yogurt
– a handful fresh herbs: chives, persil, dill
– some water
– some salt
– a dash of lemon
.
1. In a blender blend the cashews with the herbs, salt, lemon, 1/2 cup of water and mix until well combined and green 💚
2. If not creamy at all, add some more water
3. Remove from the blender and mix in the yogurt and some more herbs if you want some whole pieces in it for extra flavor
4. Store in a airtight container in the fridge and enjoy on a good slice of bread 🥰
