Have you tried seitan before?
It’s a meat replacer made out of vital wheat gluten. It’s high protein, super filling, and so versatile. There’s so many ways to flavor it but this is my go-to.
2 cups Vital Wheat Gluten
1/4 cup Nutritional Yeast
3 Tbsp Garlic Powder
3 Tbsp Cumin
1 Tbsp Paprika
1/2 tsp Black Pepper
2 cups Water
1/4 cup Low-Sodium Soy Sauce
1/4 cup Tbsp Tahini
Preheat the oven to 350F. In a large bowl, combine all of the dry ingredients. In a smaller bowl, combined the wet ingredients. Then add the wet ingredients to the dry and mix well. Knead the dough until it becomes elastic. Basically until everything is well incorporated and the dough becomes stretchy. Place the dough on a baking sheet lined with a silicone mat and flatten out to desired thickness. My dish was 8X12 and it did not touch all sides. It was about a half inch thick. Slice the dough to your desired shape and length. I cut 9 lines across the width and one down the middle lengthwise to make 18 total strips. Bake the seitan for 20-25 minute until it has a sturdy texture. Thinner seitan will cook faster. Recut the strips and then place back in the oven for another 12 minutes.
Use in a wrap, sandwich, on top of salads, or to dip into your favorite dressing.
