Ending this week with one of my favorite salads – Mediterranean style Spinach Chickpea Salad ? With the exception of feta, this yummy blend of goodness is truly satisfying. I also made roasted red pepper hummus & warm pita for a snack later ? Yummy times! Recipes below.

2 cups packed baby spinach
1/2 cup black olives
1 small pink onion
1 cucumber
2 tomatoes ( I used roma, I didn’t have cherry tomatoes) deseeded, diced
1/2 cup chickpeas ( use a small can and divide it for salad & hummus) :

Toss everything in a bowl ( not dressing) and chill for 60 mins covered in the fridge. :

For dressing:

2 lemons juiced
2 tbsp olive oil
1/2 tsp oregano
Salt & black pepper to taste
Mix everything & it’s ready to use..

For the hummus

1 red bell pepper diced & roasted
1/2 c chickpeas
1 lemon juiced
1/2 tsp tahini
Salt & pepper to taste
1/4 tsp cayenne ( optional)

Blend all the ingredients together, drizzle some olive oil before serving with some warm pita bread! Stays fresh for up to week or more in a tightly sealed container. :
