Easy and healthy vegan lunch salad! π₯
One of the perks of working from home? Being able to make the best lunches π€€ This salad was super easy to make! I had it with some roasted pumpkin on the side.
What do you need?
π± 1 red bell pepper
π± 2 medium tomatoes
π± 1 pack @vivera_nl plant groenteballetjes
π± 400 g chickpeas
π± 75 g rocket/rucola
π± 125 g spinach
π± 75 g garlic olives
π± 2 tbsp extra vierge olive oil
π± 1 tsp lemon juice
π± pepper & salt
π± handful of fresh parsley
The only necessary prep is to cut all the vegetables and bake the @vivera_nl in a pan. I cut them in half to make it quicker to bake them. When they are golden brown, just mix them with all the other ingredients!
For the pumpkin:
π± 1 medium pumpkin
π± 3 tbsp olive oil
π± pepper and salt
π± 1 tsp thyme
π± 1 tsp rosemary
Cut the pumpkin and mix in the herbs and oil. Spread on a baking tray and bake on 220 degrees for about 30-40 minutes.
