Easy and healthy vegan lunch salad! πŸ₯—

One of the perks of working from home? Being able to make the best lunches 🀀 This salad was super easy to make! I had it with some roasted pumpkin on the side.

What do you need?
🌱 1 red bell pepper
🌱 2 medium tomatoes
🌱 1 pack @vivera_nl plant groenteballetjes
🌱 400 g chickpeas
🌱 75 g rocket/rucola
🌱 125 g spinach
🌱 75 g garlic olives
🌱 2 tbsp extra vierge olive oil
🌱 1 tsp lemon juice
🌱 pepper & salt
🌱 handful of fresh parsley

The only necessary prep is to cut all the vegetables and bake the @vivera_nl in a pan. I cut them in half to make it quicker to bake them. When they are golden brown, just mix them with all the other ingredients!

For the pumpkin:
🌱 1 medium pumpkin
🌱 3 tbsp olive oil
🌱 pepper and salt
🌱 1 tsp thyme
🌱 1 tsp rosemary

Cut the pumpkin and mix in the herbs and oil. Spread on a baking tray and bake on 220 degrees for about 30-40 minutes.
