?CRUNCHY PEANUT SALAD WITH VEGAN CHEESE BALLS
Are you guys tired of salads yet? I hope not because I have some great one. This salad is all about crunch and tender. It comes together super easy and serves as a tasty light lunch.

Nutrition per portion: 300 kCal
Protein 10 g Fat 27 g Net Carb 7 g
1/2 cup chopped lettuce
1/8 cup roasted peanuts
1 tbsp peanut oil
1/2 cup of fresh mint, cilantro and parsley leaves
1/4 tsp chilli
Vegan cheese balls:
1/8 cup blanched almonds
1/2 tbsp lemon juice
1 tbsp water
pinch of salt
1. Soak the blanched almonds in water overnight. Rinse and drain. Blend it with water, lemon juice and salt. Form the small balls using teaspoon.
2. Chop a cucumber, mint, parsley and cilantro.Combine with lettuce in a mixing bowl.
3. Top salad with cheese ball and roasted peanuts. Drizzle with peanut oil and chilli flakes/powder
