Cold Rice Noodle Salad:
Serves 2
Ingredients:
#Salad:
-1/2 cup mix of thinly sliced cucumbers,carrots & onions(optional).
-1/2 cup of boiled rice noodles.
#Dressing (peanut dressing):
-3-4 tablespoon of unsweetened peanut butter.
-1 tablespoon of apple cider vinegar.
-2 teaspoon of soy sauce.
-1/2 tablespoon of maple syrup.
-Salt as per taste.
– Mix the above in a dressing form with 3-4 tablespoons of hot water.
*Stays fresh for 2 days if dressing & salad components not mixed.
*Chilli flakes can used for garnishing.
