CAULIFLOWER KALE SALAD ⠀

I’m honestly obsessed with crispy kale in salads, so so yummy 😋 ⠀

⁣+ GLUTEN FREE ⠀⠀⠀⠀⠀
+ SOY FREE⠀⠀⠀⠀⠀
+ OIL FREE ⠀⠀⠀
+ REFINED SUGAR FREE ⠀⠀⠀⠀⠀
+ MEDICAL MEDIUM FRIENDLY⠀

Ingredients:⠀

1 bunch kale⠀
2 cups arugula ⠀
1/2 cauliflower head, florets ⠀
3/4 avocado, cubed⠀
1 cup red cabbage, chopped ⠀
1/2 cup spring onions, chopped ⠀
1/2 cup red onion, sliced ⠀

Dressing:⠀

1/4 avocado ⠀
1 garlic clove ⠀
1/2 orange, juice⠀
1/2 fresh chilli⠀
1/3 cup black olives⠀
1 medjool date⠀
Salt, to taste ⠀

2-3 servings ⠀

Instructions:⠀

Preheat the oven to 375F/180C. Line a baking sheet with parchment paper.⠀

Rinse all vegetables and cut into shapes as listed in ingredients section. ⠀

Place the kale and cauliflower in the oven for about 10-15 minutes. You might need to remove the kale first, because it can get crispy quickly.⠀

Place all vegetables for the salad in a big bowl and set aside.⠀

Now, to make the dressing, add all ingredients to a blender and blend until smooth.⠀

Add the dressing to the bowl and toss it well. Transfer the salad into salad bowls.⠀
