Anyone else obsessed with pickled onions.??‍♀️ Something so simple yields so much flavor. I add this to pretty much everything and I mean EVERYTHANG! Avocado toast, burrito bowls, salads, bagel topper, sandwiches. Honestly it’s so versatile and easy to make:

Ingredients
* 1 thinly sliced red onion or thick sliced (however you like it?)
* 1:1 ratio cups of warm water and apple cider vinegar/white vinegar
* 1:1 ratio tbsp of salt and sugar/honey/agave

Place ingredients into a mason jar and make sure liquid completely covers the onions. Cover and let it sit at room temperature for one hour then pop it in the fridge. Last up to two weeks! You can add additional flavors such as black pepper, red onions, thyme, rosemary, bay leaf, mustard seed or anything else your heart desires to the jar.
