This is one of the easiest salads to make, its also perfect for meal prepping and super nutritious.

SALAD INGREDIENTS (serves 4)
β—Ž Small red, yellow and green pepper; deseeded and chopped.
β—Ž 1/2 Cup of black olives, halved
β—Ž 1 medium cucumber, quartered
β—Ž 1 can pinto beans, rinse and drained
β—Ž 1 can chickpeas, rinsed and drained
β—Ž 2 hand fulls of cherry tomatoes, halved
β—Ž Feta cheese crumbled. (Dairy free if needed)
β—Ž Olive oil garlic bread to serve (optional)

Dressing Ingredients :
β—Ž Juice of 1 lemon
β—Ž 1 tbsp of white wine vinegar
β—Ž 3 tbsp of olive oil
β—Ž 2 tbsp of water
β—Ž 1 tsp garlic granules
β—Ž 1 tsp oregano
β—Ž Salt and pepper to taste.

METHOD:

1. In a large bowl place all the salad ingredients except for the feta and bread, mix until combined well.
2. Mix all the dressing ingredients well in a bowl. Store in a glass jar in the fridge until needed.
3. Serve salad in bowl, drizzle dressing over. Top with crumbled feta and garlic bread.
4. Enjoy!
