This is one of the easiest salads to make, its also perfect for meal prepping and super nutritious.

SALAD INGREDIENTS (serves 4)
◎ Small red, yellow and green pepper; deseeded and chopped.
◎ 1/2 Cup of black olives, halved
◎ 1 medium cucumber, quartered
◎ 1 can pinto beans, rinse and drained
◎ 1 can chickpeas, rinsed and drained
◎ 2 hand fulls of cherry tomatoes, halved
◎ Feta cheese crumbled. (Dairy free if needed)
◎ Olive oil garlic bread to serve (optional)
Dressing Ingredients :
◎ Juice of 1 lemon
◎ 1 tbsp of white wine vinegar
◎ 3 tbsp of olive oil
◎ 2 tbsp of water
◎ 1 tsp garlic granules
◎ 1 tsp oregano
◎ Salt and pepper to taste.
1. In a large bowl place all the salad ingredients except for the feta and bread, mix until combined well.
2. Mix all the dressing ingredients well in a bowl. Store in a glass jar in the fridge until needed.
3. Serve salad in bowl, drizzle dressing over. Top with crumbled feta and garlic bread.
