Zucchini Tomato Galette✨
This weekend I made this amazing zucchini tomato galette. This is the perfect meal for a hot summer day. The tomato and zucchini make this dish super fresh. The tomatos and zucchinis I used are from our own garden. Love the summer time when there are so much veggies to harvest in our garden! Underneath the veggies I put a layer of tofu creme, which made this galette even more delicious.
175g tofu (rather soft, but not silken)
1/2 clove garlic
1 tsp mustard
1/2 tsp salt
pepper to taste
Put all ingredients into a food processor and blend until smooth.
1 package pastry dough
1/4 green zucchini, 1/4 yellow zucchini, 1 big tomato
some plant based milk
Slice both zucchini and tomato into relatively thin slices.
Preheat oven to 175 C.
Spread the tofu creme onto the rolled out dough, leave a little space on the sides, then layer the zucchini and tomatos onto the dough, fold the edges in, sprinkle some salt and pepper onto the galette and brush some plant based milk on the edges as a kind of „egg wash“. Then put your galette into the oven for ~ 25 mins or until golden.
