Since I started my rotations in the hospital I’m not able to make luxurieus breakfast at home anymore 🥲. Now it’s time for speedy but still nourishing breakfast. This zucchini pecan bread is perfect for a quick bite 🌱. A perfect mix of veggies, nuts and whole grains 🥰.

Wet ingredients
– 1 banana, mashed
– 1 zucchini, grated and dehydrated
– 115 gram vegan butter
– 2 tbs of chia seeds, blitzed till powder
Dry ingredients
– 120 gram whole grain flour
– 100 oat flour
– 50 gram almond flour
– 3 tbs coconut sugar
– 3 tsp baking powder
– Handfull of dates, chopped in small blocks
– 2 tsp of cinnamon powder
– 70 gram pecan nuts, chopped
– Pinch of salt

Method
– Preheat oven on 180 degrees Celsius
– Mix all the wet ingredients as well as the dry ingredients. Make sure there are no lumps
– Mix the two together and pour in a baking tray
– Bake the loaf in the oven for 55 minutes ✨
