Zucchini pasta with chickpeas and avocado basil pesto πŸ’š

Zucchini pasta is a trend in healthy nutrition and a new way to eat vegetables.😊 It looks bright, it’s very juicy and it’s low on calories.
For this pasta you need a tool called spiralizer for vegetables. It’s very useful, not only to make vegetable pasta but also to create and decorate dishes.
Sauce wise, you can use this avocado and basil sauce with regular pasta. Just add it when your pasta is ready and mix well. πŸ”₯

Ingredients:

🌱 1 zucchini
🌱 1/2 a big avocado or a small one
🌱 1/2 of handful fresh basil leaves
🌱 1-2 tbsp olive oil
🌱 ground pepper and salt
🌱 1/2 cup chickpeas from can or cooked
🌱 sundry tomatoes and basil leaves for decoration

Instructions:

1) Make the spaghetti from zucchini using the spiralizer. Cut them with your hands so that they end up having spaghetti length.
2) Mix the avocado, basil, olive oil and spices with a food processor or blender until smooth.
3) Add the chickpeas and sauce to the spaghetti and mix gently.
4 Decorate and eat right away (this is important as zucchini liberates a lot of water when you add salt to it).
