ZUCCHINI FRITTERS🥒🌿
gluten free + vegan✨

these taste like if a latke & an egg roll had a baby. but less greasy🔥

ingredients:
• 2/3 c quinoa
• 1 1/3 c broth (to cook quinoa)
• 2 c shredded zucchini (~2 zuchinis)🥒
• 1/2 c finely diced onion🧅
• 4 cloves garlic, minced🧄
• 2 c chopped greens (i used spinach)🥬
• 1/3 c GF flour (i used Bob’s all purpose)🌾
• 1 healthy pinch each sea salt & black pepper🧂

directions:
• cook quinoa using broth & a pinch of salt🧂once cooked, set aside to cool
• shred zucchini using a cheese grater then transfer to a clean towel & squeeze out excess moisture. set aside
• heat a large skillet, add oil & sauté onion & garlic until transparent. add zucchini & sauté for a few mins. then add chopped greens & cook until wilted
• in a large mixing bowl combine sautéed vegetables, cooled quinoa, & salt. lastly, add gluten-free flour & mix until combined. you should have a slightly tacky but moldable mixture
• form into thin (roughly 1/4-inch-thick) patties the size of the palm of your hand. heat some oil in a pan & pan-fry about 4 patties at a time, until brown on each side
• the middles og each patty needed some more cook time so i finished cooking them in the oven at 400 degrees for 10 mins
