ZUCCCCCC BOATS!! I love using food as vessels for other food lol. Who’s with me?? These are so wholesome and easy to make for a week night meal. You can easily diversify these and make them into an Italian themed zucc boats too! I chose to go with the Mexican flare. If these float your boat, you should give them a try!
•2 zucchinis (mine were from @aldiusa )
•1/2 cup beans of your choice (I used @krogerco pinto)
•1/2 bell pepper
•1/2 red onion
•1/3 cup corn @birdseyevegetables
•1/3 cup vegan cheese (I used pepper jack from @vevan.foods )
•2 tbsps tomato sauce @huntstomatoes
•1 tbsp garlic powder @mccormickspice
•1 tsp cayenne @mccormickspice
•Salt and pepper to taste
•Oil to taste
Optional toppings: lime juice, tomatoes, and red onion.
Sauce: 1 tbsp hummus + 1 tbsp sriracha + 1 tbsp water + Splash of lime juice.
1. Preheat your oven to 400 F. Cut your zucchinis in half and scoop out the flesh to make a boat. Finely chop up the scooped out parts along with your onion and bell pepper.
2. Sauté in a pot with the corn, beans, and seasonings. Once you get a nice char on the veggies, take them out and fill the boats with them. Top with vegan cheese and bake for 20-25 minutes or until the cheese has melted.
3. Garnish with lime juice, tomato slices, and leftover red onion. Don’t forget to make your delish sauce! Enjoy!
