Yummy Vegetable Fritters 🌱🥗🧀🥒🧅⁣⭐️

Ingredients: (2 servings) ⁣
⭐️ 1 zucchini, grated and paper towel pat dried⁣
⭐️ 1 carrot, grated ⁣
⭐️ Half a small brown onion ⁣
⭐️ 1 small can of corn, drained and paper towel pat dried ⁣
⭐️ Bit of chopped coriander ⁣
⭐️ 1/2 a cup of vegan cheese, grated. ⁣
I used the @mylifebio vegan cheddar cheese block. ⁣
⭐️ A bit of turmeric⁣
⭐️ A bit of garlic powder ⁣
⭐️ A bit of salt & pepper ⁣
⭐️ 1/2 a cup of flour (I ended up adding more flour because the mixture was too wet. Probably close to 2/3 of a cup.) ⁣
⭐️ 1/2 a cup of @sanitarium_au soy milk⁣
⁣
Method: ⁣
1. Prepare the ingredients. ⁣
2. Add all ingredients to a bowl and mix. ⁣
3. Shape mixture into patties using around 2 tbsp of mixture. ⁣
4. Cook the patties on vegetable oil on medium heat for a couple of minutes on each side until slightly browned. ⁣
5. Serve with a sauce of choice. I used sweet chilli sauce but tzatziki is a common option. ⁣
