Yummy Vegetable Fritters 🌱🥗🧀🥒🧅⭐️
Ingredients: (2 servings)
⭐️ 1 zucchini, grated and paper towel pat dried
⭐️ 1 carrot, grated
⭐️ Half a small brown onion
⭐️ 1 small can of corn, drained and paper towel pat dried
⭐️ Bit of chopped coriander
⭐️ 1/2 a cup of vegan cheese, grated.
I used the @mylifebio vegan cheddar cheese block.
⭐️ A bit of turmeric
⭐️ A bit of garlic powder
⭐️ A bit of salt & pepper
⭐️ 1/2 a cup of flour (I ended up adding more flour because the mixture was too wet. Probably close to 2/3 of a cup.)
⭐️ 1/2 a cup of @sanitarium_au soy milk
1. Prepare the ingredients.
2. Add all ingredients to a bowl and mix.
3. Shape mixture into patties using around 2 tbsp of mixture.
4. Cook the patties on vegetable oil on medium heat for a couple of minutes on each side until slightly browned.
5. Serve with a sauce of choice. I used sweet chilli sauce but tzatziki is a common option.
