?️Fritters are a favourite of mine for finger foods, and also for getting your toddler to eat vegetables! Even the best eater as a baby can turn into a picky toddler, and this is the time we need them eating all of their vegetables.
?️You can adapt these fritters depending on what vegetables you have in your fridge.
. ?INGREDIENTS ➡️Grated zucchini – 1 cup ? ➡️Grated carrot – 1 cup ? ➡️Cauliflower finely chopped – 1 cup ➡️3 eggs – whisked ? ➡️Your choice of flour – we used paleo flour for this particular recipe. .
1. Once you’ve grated your vegetables, make sure you push the excess water out of them using a tea towel or paper towel.
2. Place all vegetables inside a large bowl.
3. Add eggs and ½ cup flour.
4. Mix together, then take handfuls and turn into balls, flatten into the fry pan and fry them up! . I use coconut oil to fry fritters, due to it’s high smoking point.
