🍔 INGREDIENTS (makes 8)
1½ cups cooked chickpeas
1½ cups cooked black beans
1½ cups cooked brown lentils
1½ cups quinoa flakes
½ cup nutritional yeast
6 medium size mushrooms, minced in a food processor
½ cup raw beetroot, grated
½ cup flat leaf parsley, chopped
½ tsp fresh rosemary, finely chopped
½ red onion, finely chopped
1 tbsp tomato puree
½ tbsp dijon mustard
1 tsp vegan stock powder
1 tsp smoked paprika
1 tsp coconut sugar
1 cup kale, finely shredded

METHOD
Preheat oven to 200℃. Mash all ingredients in a bowl. Place patties on a pan and bake for 30 minutes. While cooking, grill slices of pineapple and onion rings in a frypan (no oil) until soft. Assemble with lettuce, tomato beetroot, grilled pineapple, and onion rings. Drizzle with your favourite sauce and enjoy!
