You just HAVE to try this vegan brownie recipe!
It is the best vegan (or non-vegan) brownie I’ve ever tried!! They came out so gooey and soft 🌟🌟

Ingredients:
• 80g vegan spread
• 2tbsp ground flaxseed
• 200g dark chocolate roughly chopped
• 1/2tsp coffee granules
• 125g self raising flour
• 70g ground almonds
• 50g cocoa powder
• 1/4tsp baking powder
• 250g golden caster sugar
• 1 and 1/2 tsp vanilla extract

Recipe:
• preheat oven to 170/150fan and line a square baking tin with spread and parchment

• combine 2tbsp flaxseed with 6tbsp water – leave to sit for at least 5mins

• over a pan of boiling water, in a bowl place the spread, 120g is the chocolate, 60ml water and coffee granules until all melted – take off heat and set aside to cool slightly

• using an electric whisk mix the sugar with the chocolate mixture until sugar is dissolved!

• mix in flaxseed, vanilla extract and remaining 80g chocolate 🍫

• in a separate bowl mix together the flour, cocoa powder, baking powder and ground almonds – mix until there’s no lumps

• mix the flour into the chocolate bowl until completely combined

• spoon into baking tin and bake in oven for 35/40minutes (a knife should come out clean with only a few soft crumbs)

• leave to cool COMPLETELY before cutting into slices and serve with a big scoop of vegan icecream 🍦
