You Butternut tell me you don’t like squash — my new found fall fav. ?

3. It’s more sustainable (you don’t raise demand for imported goods)

Here’s a delicious fall salad recipe made with butternut squash & pomegranates – October veg!

What you’ll need ??
✨1 butternut squash
✨1 tsp cumin
✨1 tsp ground coriander
✨olive oil
✨1 cup of cooked quinoa
✨handful of pine nuts
✨1/2 cup of pomegranate
✨ handful of mint
✨mixed greens of choice
*Dressing
✨2 tbsp pomegranate molasses
✨2 tbsp lemon juice
✨1/4 cup olive oil

How you’ll make it ??
1. Peel, chop, remove seeds of butternut squash
2. Add to baking tray, drizzle with olive oil and add in cumin, coriander, & salt ‘n pepper.
3. Cook in oven for 40 mins at 355F
4. Add all dressing ingredients into a bowl and mix together adding salt and pepper to taste
5. Combine cooked butternut squash, cooked quinoa, toasted pine nuts, pomegranates, greens, and dressing into a bowl – & mix!
