Yesterday was the first day of fall! This is my favorite season. There’s so much to look forward to, and to be quite honest, we all need something to look forward to these days!

If you’re looking for a bite of fall, then you’ve got to try this Pumpkin Spice Mug Cake.
I’m in love with mug cakes! They’re so easy, no clean-up, and are one serving of delicious goodness.
This pumpkin spice mug cake is on the healthier side too, and of course, it’s vegan!
Ingredients:
4 tbsp whole wheat flour
2 tbsp date or coconut sugar
1 tsp baking powder
1/2 tsp pumpkin pie spice
Pinch of salt
2 tbsp pumpkin puree
2 tbsp oat milk (or any dairy free milk)
1/2 tsp vanilla extract
Directions:
Combine all the ingredients in a mug. Stir, and cook in the microwave for 90 seconds! That’s it!
