I had something similar to in a restaurant a few months ago and recreated it. It’s a spaghetti aglio olio but with courgettes. It’s the same technique with the addition of courgettes. Anyway enjoy! ⠀

Ingredients – feeds 4 ⠀
2 shredded courgettes ⠀
6 garlic cloves (finely sliced)⠀
1 tsp chilli flakes (or more depending on spice tolerance)⠀
300g uncooked spaghetti ⠀
Pasta water ⠀
3-4 tbsp olive oil ⠀
2 tbsp finely chopped parsley ⠀
⠀
Step one ⠀
Cook the spaghetti in salted water. Once cooked keep behind two ladles of pasta water ⠀
⠀
Step two ⠀
Heat the oil on a low heat and add garlic. Do not burn the garlic and allow it to infuse the oil slowly⠀
⠀
Step three ⠀
After you can smell the garlic add the chilli flakes and cook for a minute ⠀
⠀
Step four ⠀
Add the courgettes and cook till slightly soft but still not completely cooked ⠀
⠀
Step five ⠀
Add spaghetti and pasta water. Cook until the water evaporates and leaves a creamy texture ⠀

Step six ⠀
Add the parsley and mix! It’s ready to eat ⠀
