Woke up to a chilly 2 degrees today 🥶 so cue all the cozy, warm foods like this creamy, dairy free tomato soup! 🥰🍅🥣 all you need is a handful of ingredients that I’m guessing you already have! 👏🏻 pair it with a grilled veggie sandwich for the ultimate lunch! 🍞🤩
Recipe:
Ingredients
1 cup chopped tomatoes
2 tbls olive oil
1/2 cup veggie broth or water
1/4 tsp dried oregano
1/4 tsp garlic powder
Dash of salt and pepper, to taste
2 tbls cashew paste
Instructions
Take tomatoes and place them in a small saucepan with 2 tablespoons olive oil. Let them blister for a few minutes, giving them a shake every minute or so. Once they look soft and blistered, add in your spices. I used 1/4 teaspoon dried oregano and garlic powder, each, and a dash of salt and pepper (to taste, you can always add more at the end!) Stir those for about 30 seconds and then transfer to a blender and add your liquid. Carefully blend until smooth in consistency. Transfer back to sauce pan and heat over medium-low heat, adding 2 tablespoons cashew paste. Stir until combined. Transfer to your bowl and enjoy!
You can top with noodles or angel hair pasta 🍝
