With these chilly winter nights, there is nothing we’ve been enjoying more than some homemade soups! Here we made a fresh lentil veggies soup that was full of nutrients and pretty simple to whip up!  We love throwing in whatever we have on hand, so you could to add spinach, kale, tomatoes, chickpeas,…really whatever suits you fancy and your pantry! 1 yellow onion
3 carrots
3 celery stalks
6 potatoes (your choice!)
1 cup lentils
1 (16 or 32 oz) can diced tomatoes
1 8 oz can tomato paste
3 Tbps nutritional yeast
Fresh herbs (we used sage, thyme, rosemary, and parsley-all because we had it fresh on hand.)
Salt and pepper to taste
4 cups vegetable stock
Water, or vegetable stock (2-6 cups depending on preferred consistency, soupy to stew-y)
Dice vegetables and rinse lentils. Add all ingredients to large soup pot or dutch oven and cook over medium-low heat until lentils and potatoes are full cooked, at least 20-30 minutes, stirring occassionally. Serve topped with fresh cilantro.
