❤️WINTER CASSEROLE & HERB DUMPLINGS❤️
…With 2 of my daughters arriving home for the week I decided to make a delicious casserole with veg I had sitting in the fridge.
Ingredients: 1 chopped red onion, 2 chopped leeks, 2 chopped carrots, 2 chopped parsnips, 2 cupfuls chopped kale, 2 chopped potatoes, 3 tsp garlic, 2 tsp cumin seeds, 2 tsp mixed herbs, 2 tsp coriander, couple of sprigs of rosemary & thyme
Casserole Method: add all vegetables to a pan with 1 tbsp oil, cook for 5 mins on medium high heat, stirring occasionally stir in spices & herbs (except for thyme/rosemary sprigs) and seasonings
Add stock water, lentils, tin tomatoes & dumplings, cover with lid
Continue cooking for 30 mins
I then added sprigs of thyme & rosemary and as I served each dish I broke the fresh herbs into each ??
I served with wholemeal bread & plant butter……

Dumpling Ingredients: 1 cup flour, 1/2 cup water, 1 tsp mixed herbs
Dumplings Method: mix all ingredients together, I rolled 6 dumplings into a sausage shape and placed into casserole
