Wholesome strawberry + blueberry crumble bars combine tender crust, jammy filling, and golden crumb topping in every delicious bite! These bars can be made with fresh or frozen berries, which makes them the perfect year-round treat!

Strawberry + Blueberry crumble bars
20cm square cake tin?

Ingredients

Blueberry + strawberry filling

• 200g strawberries, fresh or frozen
• 100g blueberries, fresh or frozen
• 1tbsp cornstarch, dissolved in 2tbsp water
• 2tbsp sweetener of choice

Crumble base

• 150g blanched almond flour
• 150g rolled oats, use GF if needed
• 80g butter, melted (use dairy-free for vegan)
• 80g maple syrup
• 1tsp baking powder
• 1/2tsp salt
• 1tsp cinnamon
• 1/2tsp cardamom

1. Make the blueberry + strawberry filling. Add berries, dissolved cornstarch and sweetener to a saucepan. Bring to a boil and cook for 8-10mins, mixing regulary + mashing with a fork to help break up strawberries. Increase the cooking time a little if using frozen berries. Turn off the heat and let cool.

2. Preheat the oven to 175C/350F. Line a 20cm square baking tin with parchment paper.

3. Make the crumble base. Add all base ingredients to a large bowl and mix well. Add 2/3 of the crumble base to the lined tray. Use a spoon to create an even layer. Top with cool berry mixture, then crumble the remaining base mixture on top. Bake in the oven for 30mins, or until golden.
Let cool completely in the tin.
