Whole roasted cauliflower is a delicious vegetarian dish and easy to make: it will take only 15 minutes of your time!
I usually eat it with a beet tahini sauce but up to you to pair it with your favorite!
* 1 cauliflower head
* 3 tbsp olive oil
* 1/2 tsp cumin
* 1/2 tsp paprika
* 1/2 tsp Japanese spices
* 1/2 tsp garlic salt
* sesame seeds
* beet tahini sauce
Preheat your oven to 400F. Mix all ground spices together.
Take the leaves out from the cauliflower and drizzle with olive oil. Then, sprinkle with spice mix and rub with your hands, so that all is covered. Place the cauliflower on a baking sheet with parchment paper and cook for 40/50 minutes. I usually take a look at 40 minutes and use a fork to check if it’s soft enough and adjust the time.
In the meantime prepare your tahini sauce: mix 3 tbsp of tahini sauce, juice of 1 lemon, zest of the lemon, 1 tbsp of water, 1 tbsp of beet juice and 2/3 canned beets. Add salt and pepper and you sauce is done!
Take your cauliflower out of the oven, drizzle with some sauce and it’s ready to eat!
