Who wants something sweet? Maybe Vegan Brownies with Cherries and Granola?
For about 20 servings you need:
250g rolled oats
500g Medjool dates, pitted
25g cocoa powder
1tsp vanilla extract
2tbsp agave syrup
pinch of Himalayan salt
200g fresh cherries, halves and pitted for layer
200g vegan dark chocolate, melted for layer + 2tbsp dairy free milk
200g granola, almond flakes, dried cherries (for topping)
Method:
Prepare 20cm square tin with baking paper. In a food processor, process the oats to the sand consistency and remove to the bowl. Next add to the food processor dates and process until smooth. Put to the oats. Add cocoa powder, vanilla, salt and agave syrup. Mix with hand to combine the ingredients. Form a ball. Place in the lined tin. Flatten by spoon or knife. Layer fresh halves cherries. Place in the freezer for about 10 minutes. Meanwhile make the chocolate layer. Melt the chocolate with milk in a bowl in a microwave twice for 30 seconds. Remove the base from freezer, pour over the melted chocolate. Scatter the granola, almonds and dried cherries over the layer and place either in a fridge overnight to set.
When ready cut into 20 slices. The brownies will keep, covered in the fridge for up to 5 days.
