Who said you should follow one recipe to make a vegetables stir fry? That’s the beauty of the plant-based world; you have the flexibility and an amazing array of colorful plants to choose from in every dish you are planning to make. .
So this is my clean up the fridge version of vegetable stir fry noodles where I used literally what I had in my fridge.. No waste, very tasty dish, and super easy to make.. You can find below the ingredients I used, you can use other veggies such as broccoli, cabbage, baby corn, or even kale or spinach. .
INGREDIENTS (3 to 4 servings): .
?For the sauce: . 3 cloves of garlic . 2 tbsp of dark soy sauce . 1 tbsp of light soy sauce . Juice of 3 limes . 1 tsp sesame oil. (You can use light soy sauce or tamari sauce all the way). .
?For the stir fry: . 1 red onion cut in slices . 1 piece of fresh ginger (4 cm)
. 3 small carrots cut in thin sticks
. 2 zucchinis cut in thin sticks . 1 green bell pepper cut in thin sticks (feel free to use any other color)
. 1 cup of mushrooms (sliced)
. 1 cup of frozen peas . 1 cup of snow peas (optional) . 1 tbsp of sesame oil . Ground black pepper to taste . 1 pack of organic rice noodles . 1/2 cup of chopped spring onions and 1 tbsp of sesame seeds to garnish .
? In a blender, blend the garlic soy sauce sauce and lime juice together. Add 1 tbsp of soy sauce or water (depending on your taste preference) if needed for the blender to work smoothly. I chose water. Set aside. .
?Heat 2 tbsp of water in a large pan or pot, toss the onion and ginger, add the black pepper and stir for a minute until aromatic. Add the frozen peas as these will take a bit of time to defrost, stir for a couple of minutes. Add the rest of the veggies and the sesame oil and stir again for a a few minutes until tender. .
?In the meantime, cook your noodles as instructed on pack. Once cooked, drain them well from their water, place them back in the pot and pour over the sauce that you prepared at the beginning. Stir gently to combine. Transfer the noodles and any of the remaining sauce in the bottom of the pot to the vegetables pan. Stir gently for 1 minute. Garnish with the spring onion and sesame seeds.
