Who knows how to make their own super yummy vegetarian gravy?? RECIPE BELOW ⬇️⬇️⬇️
1 onion quartered
2 carrots cut into 2cm chunks
3 garlic cloves unpeeled
2 sprigs each fresh thyme & rosemary
10g dried porcini mushrooms
1-2tsp Dijon mustard
Balsamic vinegar 1 -2 tsp
1-2tsp Veggie Worcestershire sauce
2 heaped tsp Vegan beef style stock
Salt & pepper to taste
Put the porcini mushrooms in a small bowl and cover with just boiled water, leave for 10 mins.
Put the onion, garlic, carrots, soaked porcini with liquid, thyme, rosemary and mustard in a pan with approx 500ml boiling water. Bring to the boil and reduce to a simmer.
Simmer gently for an hour.
After an hour strain the solids out of the liquid and return the liquid to the pan. If you want you can add 125ml red wine here.
Add the stock powder, balsamic vinegar and Worcestershire sauce. Salt and pepper to taste.
Return to the heat and simmer for approx. 20 mins.
