Who doesn’t love a Cream of Tomato Soup?
This low calorie and healthy vegan soup was made to be a bit more filling with some orzo pasta. 100% dairy free too! 🥣🥫🌱
Ingredients:
2 400g tin tomato’s
3 garlic cloves
3 celery sticks, finely chopped
1 cup of oat milk
250g of orzo
2 tablespoons of olive oil
1 onion, finely chopped
1 tsp of sugar
1 tbsp of tomato purée
Method:
🍅 In a pan of hot olive oil add onions and cook until soft
🍅 Next add the celery and cook for 3 – 4 minutes
🍅 Pour the tinned tomatoes and stir. Then add the sugar, garlic, oat milk and tomato purée.
🍅Blend then add the orzo
🍅Cook the orzo in the soup for the length of time stated on the the packet
*add more water if the the soup is too thick for you
